Ingredients:

1 cup sugar or 2/3 cup maple syrup

1/4 cup butter

1 large egg
-
2 cups pinto beans (low sodium, drained and rinsed)

1 cup flour

1 teaspoon baking soda
- 1 teaspoon cinnamon/p>

1/2 teaspoon allspice

2 cups apples, peeled and diced

1 cup raisins

1/4 cup walnuts, chopped

2 teaspoons vanilla
Instructions:

Preheat oven to 375 F.

Grease Bundt cake pan.

Mash beans in food processor until smooth.

Cream sugar and butter.

Mix in beaten egg and mashed beans.

Sift all ingredients and stir into sugar mixture.

Add apples, raisins, walnuts and vanilla.

Pour into pan and bake for 45 minutes.
