Burrito Bowl with Chicken, Quinoa & Avocado

Ingredients:

1 cup raw quinoa

2 grilled chicken breasts, cut into bite-sized pieces

14 ounces can low sodium black beans, drained and rinsed

1-1/2 cup frozen corn

2 tomatoes, diced
-
1 small red onion
-
1 jalapeno, seeded and sliced

1/2 cup fresh cilantro, chopped

1 large avocado, diced
Dressing:

1/4 cup extra virgin olive oil
-
1/4 cup fresh lime juice

1 teaspoon chili powder
-
1 teaspoon cumin
-
1/4 teaspoon sea salt

1/4 teaspoon cayenne pepper

1/4 teaspoon black pepper
Instructions:

Make quinoa according to package directions.

Prep ingredients and place in separate bowls.

Whisk dressing ingredients.

Drizzle over warm quinoa and mix
