Easy High Protein Quinoa Salad with Yogurt Dressing


Serves 1

Ingredients:

  • 1/3 cup chopped raw broccoli florets

  • 1/4 cup green peas

  • 1/4 cup corn kernels

  • 1/3 cup shelled edamame

  • 1/3 cup quinoa

  • 2 tablespoons sunflower seeds

  • 3 cups raw spinach or mixed greens

Dressing:

  1. Whisk 1/3 cup Greek yogurt with 1/4 teaspoon minced garlic, 1 tsp lemon juice, dash of salt and pepper and herbs of your choice such as dill, parsley, or cilantro.
