Red Lentils with Turmeric

Do your body good and make this red lentil and turmeric recipe tonight! Lentils are an excellent source of fiber and turmeric is linked to lower cholesterol levels, improved liver function and improved glycemic control. 

Ingredients:

• 2 cups uncooked red lentils, rinsed
• 1-2 tsp ground turmeric
• 4 cups water
• ½ tsp black pepper
• ¼ tsp salt
• 2 Tbsp extra virgin olive oil
• 1 large onion, thinly sliced
• 12 cloves garlic, thinly sliced

Directions:

Put lentils, turmeric and water into a medium pot and bring to a boil. Reduce heat and simmer until lentils are soft and pulpy (about 25 minutes). Add salt to lentils after cooking. Heat oil in a large skillet over medium heat. Add onions and garlic, and cook until golden brown, taking care not to burn. Add onion mixture to lentils and stir well. Serve hot. Makes 10 servings.
 
Option: Add additional cooked veggies — spinach, carrots, mushrooms or peppers — for more color and fiber!
