Vegan Sweet Potato Brownies

Makes 16 servings

Ingredients:

  • 1 cup sweet potatoes, mashed (from a can or baked until soft)

  • 1/2 cup light brown sugar

  • 1/2 cup extra virgin olive oil

  • 1 cup applesauce

  • 1/4 cup almond butter

  • 1/2 teaspoon salt

  • 1 cup vanilla almond milk

  • 1 3/4 cups oat flour (or other heart-healthy whole grain flour)

  • 2/3 cup cocoa powder

  • 1/2 tablespoon baking powder

  • 1/2 teaspoon cinnamon

  • 2/3 cup walnuts, diced

Preparation:

  1. Preheat the oven to 350 degrees.

  2. Blend the sweet potatoes, brown sugar, oil, applesauce, almond butter and salt in a food processor until smooth. Add almond milk and process a few pulses until combined.

  3. Mix all dry ingredients in a large bowl. Add the wet ingredients to the dry ingredients and mix well. Stir in walnuts. Pour batter into a 9” x 13” oiled pan, smoothing the top evenly with a spatula.

  4.  Bake for about 60 minutes, until the center is set and a knife comes out clean.

  5. Let cool and then frost as desired or drizzle with a powdered sugar glaze.
