Grilled Vegetable Skewers


Serves 4

Ingredients:

  • 1 zucchini

  • 1 yellow squash

  • 1 red bell pepper, seeded and cored

  • 8 mushrooms

  • 1/2 red onion

  • 2 tablespoon extra virgin olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

Instructions:

  1. You will need four metal or wooden skewers. If using wooden skewers, soak the skewers in water for at least 20-30 minutes so they don’t burn on the grill.

  2. Preheat the grill to medium heat at about 350-450 F.

  3. Cut the vegetables into half-inch slices or chunks.

  4. Thread the vegetables on the skewers, alternating each vegetable.

  5. Drizzle the vegetables with olive oil and sprinkle with salt and pepper.

  6. Grill the vegetables with the lid closed and turn the skewers every 3-5 minutes until the vegetables are tender.

  7. Serve and enjoy!
