Lemon-Dijon Green Beans

Green beans are a great source of vitamins and minerals. Have some leftovers from Thanksgiving? Here's a creative way to spice them up!

Ingredients:

• 2 lbs fresh green beans
• 2 Tbsp Dijon mustard
• 4 tsp lemon juice
• Freshly ground black pepper to taste

Directions:

1. Cook green beans until fork tender.
2. Mix together mustard, lemon juice and black pepper.
3. Pour sauce over green beans and toss. Serve.
