Pumpkin pie is my favorite fall flavor, so I incorporated pumpkin pie spice and canned pumpkin into our weekend pancake recipe. These pancakes have dietary fiber and vitamin A and great flavor!
Serves 8
Ingredients:

1 ½ cup flour

3 teaspoon baking powder

2 tablespoon brown sugar

1 teaspoon salt

1 teaspoon pumpkin pie spice

1 cup non-fat milk

1 cup pumpkin puree

2 teaspoon vanilla extract

2 large eggs
Instructions:

Mix milk, pumpkin, eggs and vanilla. Stir in brown sugar. Sift in flour, baking powder, salt and pumpkin pie spice. Mix into batter. Heat fry pan and add 1-2 Tbsp canola oil. Cook pancakes in fry pan on medium heat.
