Pumpkin Pie Pancakes

Pumpkin pie is my favorite fall flavor, so I incorporated pumpkin pie spice and canned pumpkin into our weekend pancake recipe. These pancakes have dietary fiber and vitamin A and great flavor!


Serves 8

Ingredients:

  • 1 ½ cup flour

  • 3 teaspoon baking powder

  • 2 tablespoon brown sugar

  • 1 teaspoon salt

  • 1 teaspoon pumpkin pie spice

  • 1 cup non-fat milk

  • 1 cup pumpkin puree

  • 2 teaspoon vanilla extract

  • 2 large eggs

Instructions:

  1. Mix milk, pumpkin, eggs and vanilla. Stir in brown sugar. Sift in flour, baking powder, salt and pumpkin pie spice. Mix into batter. Heat fry pan and add 1-2 Tbsp canola oil. Cook pancakes in fry pan on medium heat.
