Tuscan Chicken

Try this Tuscan chicken recipe for a quick, easy dinner with lots of flavor from Melissa Perry, a registered dietitian with Orlando Health Cancer Institute. 🍅🍗


  • 3 to 4 boneless, skinless chicken breasts

  • salt and pepper to taste

  • 3 cloves of garlic, minced

  • 1 cup mozzarella cheese, grated

  • 2 cups fresh spinach

  • 14-ounce can of artichoke hearts, drained and chopped

  • 8-ounce jar of sun-dried tomatoes, drained

  • 1 tablespoon olive oil


  1. Preheat oven to 375 degrees.

  2. Lay the chicken in the bottom of a large baking dish. Season the chicken with salt and pepper and spread the minced garlic evenly on top of the chicken.

  3. Place the spinach, artichoke hearts and sundried tomatoes on top of the chicken. Cover with mozzarella and drizzle the olive oil on top.

  4. Bake the chicken for 20 minutes uncovered. Then cover with foil and bake for an additional 25 minutes or until chicken is cooked through to 165 degrees F.
