Try this crunchy salad by Lisa Cooper, MS, RD, LDN, at Orlando Health Center for Health Improvement, it's high in fiber and cancer-fighting phytochemicals and makes a great side dish! 🥦
Serves 6
Ingredients:
For the Salad

4 cups broccoli, cut and shredded (2 medium heads)

3 apples, diced

1/4 cup red onion, diced

1/2 cup dried cranberries
-
1/4 cup sunflower seeds, shelled
For the Dressing:

1/4 cup apple cider vinegar

1/2 cup extra virgin olive oil

2 cloves garlic, minced
-
1 tablespoon maple syrup
-
1/4 teaspoon salt
-
1/4 teaspoon black pepper
Instructions:
For the Salad:
Cut broccoli florets into small pieces. Cut the broccoli stalk by removing the hard outer skin and cutting the inner stalk into matchstick-size pieces. Use a mandolin or food processor if available. Place broccoli in a bowl and add apples, red onion, dried cranberries, and sunflower seeds.
For the Dressing:
Whisk all ingredients together in a bowl. Add the dressing to salad and toss. Chill until ready to serve.
