Chunky Mango Black Bean Salsa
Serves approximately 12Ingredients:

2 mangos, diced

1/2 red onion, diced

1 red bell pepper, diced
-
1 lime, juiced
-
1 handful cilantro, chopped
-
2 avocados, diced
-
15-oz. can low sodium black beans, drained & rinsed

1 jalapeno pepper, chopped (optional)

1 can sweet corn, drained (optional)

Tortilla chips, scoop-shaped
Preparation:

Place all ingredients in a medium bowl. Add jalapeno, if spice desired, and mix well.

Refrigerate until ready to use.

Serve with scoop chips.
