Crispy Baked Fish

Crispy Baked Fish 

Makes 4 servings (serving size is 3 ounces)

Ingredients:

  • 1 pound cod filets

  • 2 egg whites

  • 3 tablespoons cornmeal

  • 3 tablespoons flour 

  • 1/2 teaspoon garlic powder

  •  3/4 teaspoon paprika

  • 1/4 teaspoon dill weed

  • 1/8 teaspoon black pepper

  • 1 tablespoon Parmesan cheese

Preparation:

  1. Rinse fish and pat dry.

  2. Blend dry ingredients together.

  3. Spray baking pan with cooking spray.

  4. Dip fish in beaten egg whites and then coating mixture; shake off excess coating. Lay fish into the pan.

  5. Bake for 15 to 20 minutes at 375°F or until the fish flakes and is golden brown.
