Ingredients:

10 ounces fresh baby spinach

1 lb. strawberries, sliced

3/4 cup crumbled reduced fat feta cheese

1/2 cup raw pecans halves

1/2 small red onion

2 tablespoons extra-virgin olive oil

1/4 cup balsamic vinegar

1/2 teaspoon Dijon mustard

1/2 tablespoon honey
Instructions:

Prepare the dressing: In a small mixing bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard and honey until combined. Set the dressing aside.

Place the spinach in a large serving bowl and add the strawberries, feta cheese, pecans and red onion on top.

Drizzle the salad dressing on top of the salad and toss to combine. Serve and enjoy!
