Burrito Bowl with Chicken, Quinoa & Avocado

Serves 6

Ingredients:

  • 1 cup raw quinoa

  • 2 grilled chicken breasts, cut into bite-sized pieces 

  • 14 ounces can low sodium black beans, drained and rinsed

  • 1-1/2 cup frozen corn 

  • 2 tomatoes, diced

  • 1 small red onion

  • 1 jalapeno, seeded and sliced

  • 1/2 cup fresh cilantro, chopped 

  • 1 large avocado, diced

Dressing:

  • 1/4 cup extra virgin olive oil

  • 1/4 cup fresh lime juice

  • 1 teaspoon chili powder 

  • 1 teaspoon cumin

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon black pepper

Instructions:

  1. Make quinoa according to package directions.

  2. Prep ingredients and place in separate bowls.

  3. Whisk dressing ingredients.

  4. Drizzle over warm quinoa and mix

  5. Assemble bowls starting with quinoa and add favorite ingredients (chicken, onion, black beans, etc.).
