Signs of spring are all around us in grocery stores and at farmers’ markets. 🌱 To make use of the fresh, bright-colored vegetables and fruits, try this easy spring side dish by Melissa Perry, a registered dietitian at Orlando Health, to pair with any meal.
Makes 4 servings
Ingredients:

2 bunches asparagus

2 tablespoons olive oil

2 lemons
-
3 garlic cloves, minced

1/2 teaspoon black pepper

1/4 cup parmesan cheese, grated
Instructions:

Preheat oven to 400 degrees F.

In a large bowl, add the asparagus and drizzle with olive oil. Add the garlic, pepper and juice from one lemon to the bowl and toss until the asparagus is evenly coated.

Evenly spread the asparagus onto a sheet pan and bake for 10 minutes in the oven.

Remove the asparagus from the oven and sprinkle with the parmesan cheese. Then broil for about one minute or until the cheese is golden.

While the asparagus is broiling, slice the remaining lemon. When asparagus is done, garnish with the sliced lemon and enjoy!
