Chunky Mango Black Bean Salsa

Try this make-ahead salsa recipe for a healthy snack this summer, provided by Lisa Cooper, a registered dietitian with Orlando Health.

Chunky Mango Black Bean Salsa

Serves approximately 12

Ingredients:

  • 2 mangos, diced

  • 1/2 red onion, diced

  • 1 red bell pepper, diced

  • 1 lime, juiced

  • 1 handful cilantro, chopped

  • 2 avocados, diced

  • 15-oz. can low sodium black beans, drained & rinsed

  • 1 jalapeno pepper, chopped (optional)

  • 1 can sweet corn, drained (optional)

  • Tortilla chips, scoop-shaped

Preparation:

  1. Place all ingredients in a medium bowl. Add jalapeno, if spice desired, and mix well.

  2. Refrigerate until ready to use.

  3. Serve with scoop chips.
