Looking to add a bit of green to your Thanksgiving feast? Try out this kale salad. Kale is a great source of Vitamin C and is full of antioxidants!
Yield: 6 servings
Ingredients:
• 2 bunches curly kale
• 1/4 cup grated parmesan cheese (optional)
• 1/2 cup sliced, toasted almonds (optional)
Dressing:
• 1/4 cup extra virgin olive oil
• 2 Tbsp lemon juice
• 1 garlic clove, minced
• Salt and freshly ground pepper to taste
Directions:
1. Prepare the dressing first by combining olive oil, lemon juice, garlic, salt and pepper. Whisk together and set aside to allow flavors to blend.
2. Wash the kale and dry leaves. Chop into bite-size pieces, discarding the thick stalks, and place in a large bowl for tossing.
3. Pour the dressing over the kale and toss salad so the leaves are covered with dressing. Next, sprinkle kale with parmesan cheese and almonds, if desired. Toss some more.
