Serves 4
Ingredients:

1 pound Roma tomatoes, cubed

1 medium onion, chopped

2-3 cloves garlic, minced

10 fresh basil leaves, sliced in ribbons

8 ounces whole-grain pasta (whole wheat, brown rice, quinoa, etc.)

Olive oil · Feta cheese, crumbled
Instructions:

Boil pasta according to directions.

Heat large frying pan and add olive oil. Sauté garlic and onions until translucent.

Add cubed tomatoes. Cover and simmer on low, stirring occasionally.

When tomatoes appear softened, add basil and cook an additional five minutes.

Serve tomato mixture over pasta. Top with feta.
