Oatmeal Apple Muffins

Serves 12

Ingredients:

  • 1 cup old fashioned oats

  • 1 cup nonfat milk

  • 1 cup whole wheat flour

  • 1/2 cup brown sugar

  • 1/2 cup applesauce, unsweetened

  • 1 egg

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon sugar

  • Raisins (optional)

Instructions:

  1. Soak oats in milk for 1 hour.

  2. Preheat oven to 400 F.

  3. Place 12 cupcake liners in muffin tin and spray with cooking spray.

  4. Mix oats, applesauce and egg and raisins in a large bowl.

  5. In a separate bowl, combine dry ingredients.

  6. Add dry ingredients to oat mixture and combine. Spoon into muffin tins.

  7. Combine cinnamon and sugar in small bowl. Top muffins with mixture.

  8. Bake 20-25 minutes. Remove from pan and cool.
