Ingredients:

1 cup old fashioned oats

1 cup nonfat milk

1 cup whole wheat flour

1/2 cup brown sugar
-
1/2 cup applesauce, unsweetened

1 egg
-
1 teaspoon baking powder
-
1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon
-
1 teaspoon sugar

Raisins (optional)
Instructions:

Soak oats in milk for 1 hour.

Preheat oven to 400 F.

Place 12 cupcake liners in muffin tin and spray with cooking spray.

Mix oats, applesauce and egg and raisins in a large bowl.

In a separate bowl, combine dry ingredients.

Add dry ingredients to oat mixture and combine. Spoon into muffin tins.

Combine cinnamon and sugar in small bowl. Top muffins with mixture.

Bake 20-25 minutes. Remove from pan and cool.
