Avocado Egg Salad

Ingredients:

  • 1 ripe avocado, mashed

  • 4 hardboiled eggs, finely chopped

  • 1 tablespoon plain Greek yogurt

  • 1 teaspoon Dijon mustard

  • 1/2 tablespoon scallion, chopped

  • 1/2 teaspoon ground black pepper

  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions:

  1. Combine the mashed avocado, chopped eggs, Greek yogurt, Dijon mustard, scallions and pepper in a medium bowl and mix thoroughly.

  2. Spread the avocado egg salad mixture evenly among two slices of bread or lettuce wraps. Garnish with fresh parsley and enjoy!
